Hen or Chicken in Hot Pepper Sauce
Makes 2 servings, 2 ounces of milk per serving.
Ingredients
| 3 ounces | hen or skinless chicken breast |
| 1 | yellow or green hot pepper, seedless, washed, finely chopped |
| 1 | slice of white bread, without crust |
| 1/2 cup | fat free evaporated milk |
| 1/4 tablespoon | minced garlic |
| 2 tablespoons | chopped onion |
| 2 tablespoons | grated Parmesan cheese |
| 1 | hard boiled egg |
| Olives to taste | |
| 2 | potatoes, boiled and sliced in half |
Directions
Parboil the chicken in water with salt. Once it’s soft, drain, cool and shred.
In a pot with olive oil, fry the garlic, onion and hot pepper; add the bread soaked in a little bit of chicken broth.
Blend mix with the evaporated milk. Heat the chicken and the blended mix for 10 minutes, adding the grated cheese.
Serve hot on the sliced potatoes and decorate with the hard-boiled eggs and olives.
Can be served with white rice, if desired.
