Meat Loaf

Meat Loaf

Makes 6 servings, Approximately 3 ounces of milk per serving.

Ingredients

2 cups ground beef, low fat
8 medium potatoes
1 tomato
2 tablespoons tomato puree
3 hard boiled eggs
1/2 cube vegetable broth bouillon
salt, oregano and pepper to taste
White Sauce
2 cups fat free or low fat milk
4 tablespoons flour
1 1/2 tablespoons low-calorie butter
1/2 teaspoon nutmeg
1/4 teaspoon mustard, optional
Salt and pepper to taste


Directions

Peel the potatoes and cook in a pot with water and salt.
Put ground beef, finely chopped tomato (without skin), tomato purée and condiments in a bowl.
Pour mix in a frying pan with a spout of oil. While cooking, incorporate the vegetable broth and remove when ready.
Once the potatoes are cooked, remove from stove and prepare a seasoned puree with salt and pepper
(do not pour any other liquid, except for oil to get consistency).
Pour half of purée in a loaf pan, previously buttered. Add the beef mix, spreading it throughout the pan.
Place slices of egg on top. Cover with the other half of the purée, spreading throughout the pan.
Heat in the oven at 375 degrees F for approximately 15 minutes.
